KBB#33 : SOMETHING ARTISAN : BAGELS


Bagels....... salah satu jenis roti yang aku sukaaa sekali tapi harganya mahal, jadi cuma beli sekali-kali.
Kebetulan tugas KBB#33 kali ini adalah bikin Bagels. Terus terang waktu baca resepnya merasa agak ngeri karena kayaknya ribet sekali, tetapi ternyata proses pembuatannya tidak terlalu susah.

Sempet tanya apakah boleh pakai Breadmaker, karena biasanya bikin roti selalu mengandalkan Breadmaker kesayangan. Kata Arfi.."wong terigu cuma 1/2 kg kok, masak nggak bisa ngulen manual". Jadi malu dech.

Bener ternyata menguleninya tidak susah. Dan bersyukur sekali proses pembuatannya lancar.

Berikut resep dan proses pembuatannya :

Resep Dough
21g barley malt syrup, madu, atau rice syrup, atau 7g diastatic malt powder
3g ragi instant
10,5g garam
255g air hangat (sekitar 35C)
454g unbleached bread flour

Resep Rebusan Roti
181-272g air
28,5g barley malt syrup atau madu (optional)
14g baking soda
7g garam

Metode Membuat Dough
Aduk malt syrup, ragi, dan garam ke dalam air hangat. Masukkan tepung ke dalam mangkuk mixer dan tuang campuran malt syrup ke dalamnya. Jika menggunakan micer, gunakan pengaduk dough dan kocok menggunakan kecepatan rendah selama 3 menit. Jika pakai tangan, gunakan sendok kayu yang besar dan aduk hingga 3 menit, hingga tercampur rata. Adonannya musti terbentuk rada padat, membentuk bola kasar, dan semua tepung harus sudah tercampur rata dengan cairan, jika tidak maka tambahkan sedikit air. Biarkan adonan istirahat selama 5 menit.

Kocok lagi dengan kecepatan rendah selama 3 menit atau tuang ke atas meja kerja yang sudah ditaburi tepung lalu uleni dengan tangan selama 3 menit hingga adonan lembut dan sudah membentuk gluten. Adonannya akan elastis, jika dirasa dengan tangan akan berasa lembut. Jika adonan terlalu lembek maka perlu tambahkan sedikit tepung.

Letakkan adonan ke dalam mangkuk yang telah diolesi minyak tipis, tutup mangkuk dengan plastik dan biarkan adonan naik dalam suhu ruangan selama 1 jam.

Ketika anda siap untuk membentuk bagels, siapkan baking tray yang dilapisi parchment paper atau silicone mat, lembabkan dengan spray oil atau olesi dengan minyak, tipis-tipis saja. Bagi adonan 6-8 adonan kecil. (Umumnya berat bagels 113g sebelum dipanggang, tapi anda bisa bikin lebih kecil dari itu.) Bulat-bulatkan adonan (ngga usah terlalu padat) dengan cara menggilingnya di atas meja kerja dengan satu telapak tangan yang ditangkupkan. Jika anda bikin lebih dari 6 bagels, anda harus menyediakan 2 baking tray. Jangan gunakan tepung di atas meja kerja anda. Jika adonan tidak bisa dipulung membentuk bola, lap saja meja kerja anda dengan serbet lembab dan coba lagi.

Ada dua metode membentuk bola-bola adonan menjadi bagels. Metode pertama adalah melobangi bagian tengan bola adonan untuk menyerupai bentuk donat. Pegang adonan dengan kedua ibu jari di dalam lobang, putar adonan dengan tangan anda, sedikit demi sedikit memelarkan adonan hingga lobang membesar sekitar 2 inci (1 inci = 2,54cm). Metode kedua adalah dengan menggunakan kedua tangan membentuk adonan dari bola-bola menjadi berbentuk sosis dengan ukuran panjang sekitar 8 inci di atas meja kerja yang bersih dan kering. Tipiskan sedikit kedua ujung sosis dan lembabkan kedua ujungnya. Letakkan satu ujung adonan ke atas telapak tangan anda dan gulungkan mengelilingi tangan anda hingga membetuk lingkaran, mulai dari celah antara ibu jari dan jari telunjung dan mengelilingi telapak tangan. Ujung-ujungnya akan bertumpuk sekitar 2 inci. Satukan sambil dipencet ujung-ujung yang bertemu dan bertumpuk ini dan tekan ujung-ujung ini ke atas meja kerja, gulung-gulungkan ke depan dan belakang beberapa kalu supaya lengket. Lepaskan adonan dari tangan anda, sama ratakan ketebalannya jika perlu dan lubang di tengah dengan diameter berukuran sekitar 2 inci.

Letakkan bagel yang sudah dibentuk ini di atas baking tray yang sudah disiapkan, lembabkan dengan spray oil atau olesi sedikit minyak. Tutup seluruh baking tray dengan plastik dan simpan di kulkas semalaman atau hingga 2 hari. (Anda juga bisa proofing seluruh adonan di dalam mangku yang telah diolesi minyak selama semalam dan kemudia bentuk bagelsnya pada hari akan dipanggang, 60-90 menit sebelum direbus dan kemudian dipanggang, atau sesegeranya setelah lulus float test).

Baking Day!
Keluarkan bagels dai dalam kulas 60-90 menit sebelum anda memanggangnya, dan jika anda merencanakan untuk menaburkan bawang kering (dried onion) atau bawang putih di atasnya, rehydrate dulu bahan-bahannya. Segera check apakah bagels sudah siap untuk dipanggang menggunakan 'float test'. Yaitu: letakkan sebuah bagels ke dalam sebuah mangkuk kecil berisi air dingin. Jika bagels tenggelam, maka keringkan dan kembalikan ke atas baking tray, lalu tunggu hingga 15-20 menit, lalu test lagi. Jika bagels mengapung, maka sudah siap direbug. Jika bagels lulus test tapi anda belum siap baking, masukkan kembali ke kulkas sehingga tidak overproof. Sekitar 30 menit sebelum baking, panaskan oven dengan suhu 260C dan kumpulkan garnish anda (biji-bijian, bawang bombay, bawang putih, dan sebagainya).

Isi panci dengan 181-272g air, pastikan tinggi air sekurang-kurangnya memilki kedalaman 4 inci. Tutup, biarkan mendidih, lalu kecilkan api dan biarkan simmering (air tetap mendidih tapi tidak membentuk balon-balon besar). Masukkan malt syrup, baking soda, dan garam.

Masukkan bagel satu persatu ke dalam air rebusan hanya sampai panci bisa memuatnya, jangan over-crowded ya. Bagels akan segera mengapung dalam kurun waktu 15 detik. Setelah 1 menit, gunakan sendok berpori lalu balikkan bagel satu per satu. Teruskan merebus hingga 30-60 detik, lalu gunakan sendok berpori keluarkan dari air rebusan dan letakkan ke atas baking tray. (Penting kiranya bahwa parchment paper diolesi sedikit minyak, jika tidak nanti bagels akan lengket ke kertas). Taburi taburan sesuai selera anda sesegeranya (kecuali cinnamon sugar—lihat keterangan di bawah).

Masukkan bagels ke dalam oven, panggang dengan suhu yang dikecilkan hingga 232C, selama 8 menit, lalu putar loyang dan check bagian bawah bagels. Jika terlalu gelap, letakkan loyang lain di bawah loyang yang berisi bagels. Panggang lagi selama 8-12 menit, hingga bagels berwarna kecoklatan. Dinginkan ke atas rak sekitar 30 menit sebelum diiris atau disajikan.

Variasi
Ganti jumlah bread flour dengan whole grain flour sesuai takaran. Jika begitu, anda harus menambah jumlah air ke dalam adonan 14g untuk setiap 56.5g whole grain flour.

Bahan taburan bisa dikombinasikan: biji poppy, biji wijen, garam kasar, atau bawang bombay/bawang putih kering (rehydrate: rendam bawang bombay/bawang putih kering di dalam air sekurang-kurangnya 1 jam sebelum digunakan). Topping akan lengket lebih baik jika anda mengolesi setiap bagels dengan egg white wash dengan mencampur 1 putih telur dengan 14g air. Jika menggunakan garam kasar sebagai taburan, ingatlah sedikit saja sudah cukup.

Untuk bagel kismis, campur 227g kismis selama 2 menit terakhir pengadukan adonan, dan jika anda suka bubuk kayu manis, aduklah 4g bubuk kayu manis ke dalam tepung sebelum anda mulai mengaduk. Ketika bagels baru keluar dari oven, olesi bagian atasnya dengan mentega leleh dan gulingkan atasnya ke atas campuran bubuk kayu manis dan gula untuk memberi rasa cinnamon crust yang lezat. Anda bisa membuat cinnamon sugar dengan mencampur 44g bubuk kayu manis dengan 113g gula.







Setelah matang rasanya tidak sabar untuk mencobanya... And the verdict is...... Wow...Yummy Homemade Bagel. Bagian luarnya Crisp dan dalamnya empuk..tekstur bagelnya pun bagus. 
Sekarang kalo pengen Bagel, sudah tidak perlu mencari dan beli mahal lagi.

KBB# 30 Rosemary Cheese Spritz Cookies



Lega sekali akhirnya bisa menyelesaikan tantangan KBB kali ini setelah ijin untuk tantangan sebelumnya.

Cookies yang menjadi tantangan kali ini sangat mudah pembuatannya. Dan rasanya enakkk sekali.. Waktu dipanggang saja harumnya sudah memenuhi rumah. Aku suka sekali perpaduan wangi rosemary, butter dan kejunya. Walaupun tidak bisa makan keju tp untuk kali ini aku niat mencoba rasa cookies ini dannn ternyata bikin ketagihan.

Proses pembuatan mengharuskan memakai cookie press tapi ternyata pas mau dipakai cookie press ku rusak... jadi akhirnya aku menggunakan spuit.

Berikut adalah resepnya plus sedikit modifikasi yang aku lakukan


Rosemary-Cheese Spritz Cookies
(Food Network Kitchens)

Ingredients
1 cup (2 sticks) unsalted butter              
1 teaspoon finely grated lemon zest
1 large egg yolk                                                
6 tablespoons heavy cream
1 3/4 cups all-purpose flour                              
3/4 cup finely grated Pecorino cheese (ganti dengan Keju Edam)
1/2 cup finely grated Parmesan cheese  
1 tablespoon sugar
2 teaspoons minced fresh rosemary leaves         
1 teaspoons fine salt (diskip karena memakai keju edam)
Pinch freshly ground nutmeg     

Special Equipment: Cookie Press (menggunakan spuit)



Directions
Bring all ingredients to room temperature.
Beat the butter and lemon zest with an electric mixer at medium speed until smooth, about 30 seconds. Slowly beat in the egg yolk and cream.
Whisk the flour, pecorino, 1/4 cup of the Parmesan, sugar, rosemary, salt, and nutmeg together in a bowl. Gradually add the flour mixture into the butter mixture while mixing slowly. Scrape down the sides of the bowl, then beat on medium speed to make a slightly sticky dough.
Fill the cookie press with the dough. Assemble the press with the desired disk shape (see cook's note), and press cookies onto ungreased baking sheets. Leave about one inch between cookies. Sprinkle with the remaining 1/4 cup Parmesan and refrigerate cookies for 20 minutes.
Preheat oven to 325 degrees F.
Bake cookies, rotating pan halfway through, until golden, the cheese browns a bit, and the cookies smell nutty, about 20 to 25 minutes. Briefly cool the cookies on the baking sheets, then transfer to racks to cool. Serve or store in a tightly sealed container for up to 1 month.
Cook's Notes: These freeze beautifully. Press the cookies out into desired shapes on cookie sheets and freeze. Transfer frozen cookies to a plastic bag, seal, and keep frozen for up to 1 month. When ready to bake, lay out frozen cookies on cookie trays and bake from frozen for 25 minutes.
Some disk shapes work better than others. Since this is savory cookie, we liked the cutters that result in a cracker shape cookie.

Honey Castella


It's been quite sometimes since I was curious about this cake. And I was even more intrigue when my cousin who doesn't like cake took a course in making this cake. Hmmm this must be something good.

So I started to look for recipes that I could try, then I found out that many bloggers are also caught in this Castella's bug ^_^. When I saw Zoe from bakeforhappykids posted the Castella (I really admire her beautiful blog), I promised myself that I will try on the recipe.

And The Castella is just like everyone said a flavorfull and soft cake. I love it and have been baking it a few times.Mine is not a perfect one, but I'll practice more to make it right
Here's the recipe..try it you'll love it

Honey Castella
(Bee Ren - rotinrice Modified by Zoe - bakeforhappykids)

Ingredients
3 egg whites at room temperature
3 egg yolks at room temperature
50 g sugar
75 g bread flour, sifted
40 g honey diluted with 1 1/2 tbsp hot water

Method
Line a 10 cm x 22 cm loaf pan with aluminum foil followed by parchment paper. Preheat oven to 165°C
Beat egg whites in mixing bowl at high speed until slightly foamy. Add sugar in 3 batches until soft peaks form.
Add yolks one at a time at low speed until well combined. Add sifted bread flour and beat until just combined. Pour in honey mixture and continue to beat for 1 min.
Pour batter through a sieve into cake pan. Tap pan lightly to remove air bubbles. Smoothen the top of batter to remove any remaining bubbles.
Bake in preheated oven for 45 min or until top is evenly browned. Toothpick inserted into cake should come out clean. Remove pan from oven and drop it from a one foot height onto the counter to prevent shrinkage.
When cake is cool enough to handle, remove from pan. Peel off parchment paper and turn it upside down onto a fresh piece of parchment paper. Wrap with plastic wrap and leave overnight at fridge to preserve moisture in the cake and for flavor to develop.
To serve, cut off edges on three sides except the browned top with a very sharp knife. Cut into thick slices using a sawing motion and serve with a cup of tea.

KBB#28 Torta Pasqualina (Savoury Bake)



Torta Pasqualina literally means 'Easter cake' in Italian. It's a typical Easter dish from Piemonte and Liguria.
The dough is a layered dough, a bit like 'fillo dough', but thicker.
It's called 'pasta matta' (i.e. crazy dough) As this dish comes from Liguria it contains a local cheese called Prescinseua which can only be found in Liguria. It is very creamy, soft and slightly acidulated.
It’s unlikely you will find Prescinseau so a very soft ricotta can or a regular ricotta with the addition of a little milk will do.

Torta Pasqualina

Ingredients:
DOUGH:
600 g (1 lb 5 oz) white flour
6 Tbs olive oil
a pinch of salt

FILLING:
1 kg (2 lb) Swiss chard (silver beet) or spinach
400 g (0.9 lb) cottage cheese/ricotta cheese
100 g (3.5 oz) parmesan
10 eggs
2 teaspoons marjoram, chopped
2 teaspoons parsley, chopped
garlic, minced (optional)
olive oil
salt, pepper

Preparation:
1. DOUGH:
-Combine flour, oil, a pinch of salt and enough cold water to make a
medium soft dough.
-Knead well for 10 minutes or until the dough becomes elastic.
-Divide the dough into 14 balls.
-Cover with cloth and let stand for about 1 hour.

2. FILLING:
-Clean, wash and dry the Swiss chard.
-Place in a saucepan with little boiling water and cook at high heat
until wilted.
-Cool, then squeeze out excess liquid and chop finely.
-Add 50 g (1.7 oz) parmesan cheese, marjoram, parsley, garlic and 2
eggs. Season with salt and pepper.

3. Oil a round shallow oven dish, 9 inches (22 cm) in diameter.
4. Flatten each piece of dough, one at a time, making each a very thin disk, larger than the baking pan you are going to use.
5. Lay the pastry on the oven dish, allowing it to flow over the edges. Oil it lightly.
6. Place another disk over it and repeat until you have used 7 disks.
7. Spread the Swiss chard stuffing over the dough, and then spread the cottage cheese over the greens level with a knife.
8. Make 8 small cavities. Pour a raw egg into each cavity and sprinkle each with salt, pepper and remaining parmesan cheese.
9. Cover the whole lot with the same number of pastry sheets, each brushed with oil.
10. Pinch the borders and trim the excess dough, prick the top of the pie in a few places and then brush with oil.
11. Bake for 1 hour in 190 C (375 F) oven. Allow to rest before removing from the cake tin

KBB#27 Fortune Cookies


Tantangan kali ini sebenarnya mudahhh sekali pengerjaannya..(kalau tidak melihat jari2x yg melepuh he..he.) Tetapi karena datangnya bebarengan dengan persiapan dan perayaan Imlek jadinya baru setor pas sudah super mepet... (Sorry Bu Hosts..aku jangan dikutuk jadi tambah gemuk ya..;-p)

Yang paling enjoy Fortune Cookies ini adalah bocah-bocah di rumah... mereka sibuk memecah Fortune Cokiesnya dan membaca isi "ramalannya" ("Ramalannya aku ambil dari Motivational Quotes he..he..he..)

Fortune cookies can be tricky to make - it's important to make sure that the cookie batter is spread out evenly on the baking sheet. Instead of using the back of a wooden spoon to spread the batter, it's better to gently tilt the baking sheet back and forth as needed. Wearing cotton gloves makes it easier to handle and shape the hot cookies. This fortune cookie recipe makes about 10 cookies.

Ingredients:
2 large egg whites
1/2 teaspoon pure vanilla extract
1/2 teaspoon pure almond extract
3 tablespoons vegetable oil
8 tablespoons all-purpose flour
1 1/2 teaspoons cornstarch
1/4 teaspoon salt
8 tablespoons granulated sugar
3 teaspoons water


Preparation:
1. Write fortunes on pieces of paper that are 3 1/2 inches long and 1/2 inch wide. Preheat oven to 300 degrees Fahrenheit. Grease 2 9-X-13 inch baking sheets.
2. In a medium bowl, lightly beat the egg white, vanilla extract, almond extract and vegetable oil until frothy, but not stiff.
3. Sift the flour, cornstarch, salt and sugar into a separate bowl. Stir the water into the flour mixture.
4. Add the flour into the egg white mixture and stir until you have a smooth batter. The batter should not be runny, but should drop easily off a wooden spoon.
Note: if you want to dye the fortune cookies, add the food coloring at this point, stirring it into the batter. For example, I used 1/2 teaspoon green food coloring to make green fortune cookies.

5. Place level tablespoons of batter onto the cookie sheet, spacing them at least 3 inches apart. Gently tilt the baking sheet back and forth and from side to side so that each tablespoon of batter forms into a circle 4 inches in diameter.
6. Bake until the outer 1/2-inch of each cookie turns golden brown and they are easy to remove from the baking sheet with a spatula (14 - 15 minutes).
7. Working quickly, remove the cookie with a spatula and flip it over in your hand. Place a fortune in the middle of a cookie. To form the fortune cookie shape, fold the cookie in half, then gently pull the edges downward over the rim of a glass, wooden spoon or the edge of a muffin tin. Place the finished cookie in the cup of the muffin tin so that it keeps its shape. Continue with the rest of the cookies

Not sure apakah hasil akhirnya sudah benar...tapi memang ada beberapa yang crack.
Atas permintaan bocah-bocah akhirnya sisa adonann aku buat tuilles dengan almond..

KBB#26 Italian Bread - Panettone


This KBB challenge is really challenging....
I tried and failed and tried then failed again.
But however the outcome is I have to report to the hosts because it's almost end of report time
Hopefully in the near future I can retry and success

The recipe is as below


Panettone (traditional Italian christmas bread)

Ingredients
 - 1 1/2 cakes of fresh baker's yeast
- 65 ml (1/4 cup) sugar
 - 6 tbsp. warm water
- 6 egg yolks
- Finely grated zest of 1 lemon
- A pinch of salt
 - 500-750 ml (2-3 cups) flour
 - 100 ml (6 tbsp.) diced candied peel
 - 100 g (6 tbsp.) + 2 tbsp.butter
- 4 tbsp. sultanas
- 4 tbsp. currants
 - 1 tsp. vanilla


>> Method
 Sprinkle 1 tbsp. granulated sugar and the yeast over the warm milk and let sit 3 minutes; mix and let rest in a warm draft-free place (e.g., a warm oven that has been turned off) until the mixture has doubled in volume, approximately 5 minutes;
 pour the mixture into a bowl, add in the egg yolks, vanilla, lemon zest, salt and remaining sugar;
gradually mix in 500 ml (2 c.) of the flour by hand until a smooth consistency is attained - the dough should easily come together into a ball;
 gradually add the butter cut into small dice and beat until the dough becomes smoother and more elastic;
 add 125 to 250 ml (1/2 to 1 c.) more flour until the dough is firm and silky but not sticky;
place the ball onto a lightly floured surface. Knead the dough for approximately 10 minutes. When the dough is smooth and shiny, place into a buttered bowl; dust lightly with flour, cover with a kitchen towel and place in a warm draft-free place for about 45 minutes until doubled in volume;
 punch down the dough firmly with your fist and flatten it out in the bowl; add the candied lemon peel, raisins and currants and knead until well distributed but without working the dough more than necessary;
line a large bread pan with brown paper that has been well buttered on both sides; place the dough in the pan and trace a cross on top;
cover with buttered paper and let rise again in a warm place for 15 minutes;
remove the paper from the top; brush the top with softened butter.


 Baking

Preheat the oven to 200°C (400° F);
place the bread pan on the middle rack of the oven and bake for 10 minutes;
 reduce the oven temperature to 160° C (350° F) and continue baking for another 30 to 40 minutes, brushing again with melted butter; the bread is done when the surface is golden and crispy;
 remove from the oven; remove the paper and let cool for 15 minutes before unmolding.

Then the results....


The bread is not rising as it should be...I want to cry....

NCC-CFW Mango Pudding

It's Time for Dessert....

Berhubung lagi musim mangga, jadi anak-anak minta dibuatkan puding mangga seperti yang di Restoran dim sum
Setelah googling akhirnya dapet resep yang sesuai dengan stok bahan yang ada di rumah.

Mango Pudding
(Adaptasi dari blognya Food-4tots)
Resep tidak aku terjemahkan karena takut jadi salah ;-p


Ingredients:
2 large or 3 small ripe mangoes (250g for puree and 150g for cubes)
9g gelatin powder (equals to 3 tsp or 1 tbsp)                                         1 tsp lemon juice
50-60g sugar (depending on the sweetness of the mangoes)                   100ml + 40ml water
80ml fresh cream (I used whipping cream)

Methods:
In a small glass bowl, sprinkle gelatin powder over 40ml water. Let the gelatin absorb the liquid and bloom (meaning each granule becomes enlarge). Set aside.
Cut mangoes. Place a mango on your palm or stand the mango on your cutting board with stem end down and hold. Slice the mango lengthwise as close to the seed as possible and continue for all the sides. You should have 4 (2 large and thick, 2 slim and thin) mango pulps (cheeks), and the middle section that included the seed. Take a sharp knife to make crisscross cuts (with 1cm apart) in each pulp to form a checkerboard pattern. Be careful not to cut through the skin. Turn the scored mango pulp inside out by pushing the skin up from underneath. Use the knife to slice the mango flesh away from the skin in several shallow layers to obtain the mango cubes (about 1cm thickness). Use a spoon to scoop out the remaining flesh. Blend 250g mango flesh into puree. Add in ½ tsp lemon juice and mix well.
Add another ½ tsp lemon juice to 300-350g mango cubes and set aside.
Use a medium saucepan, add in 100ml water and sugar. With low heat, bring it to a boil to dissolve the sugar. Off the heat and add in the soaked gelatin into the pan to combine with the sugar mixture.
Add in mango puree and mix well. Add in mango cubes and mix well.
Add in fresh cream and mix well. Transfer the saucepan to a large pot (or any kind of container with large base) that filled with ice water. Use a spatula or wooden spoon to stir the pudding mixture until it becomes slightly thick. Remove the pan from the ice water. With a large spoon/ladle, pour the pudding mixture into moulds or ramekins. Place the moulds or ramekins onto a tray. Cover with cling wrap and chill in the fridge for at least 2 hours or overnight for the puddings to completely set.

Note : 
1. Untuk mangganya aku menggunakan campuran mangga harum manis dan mangga gedong. Karena mangga gedong agak berserat jadi puree mangga aku saring dulu supaya teksturnya lebih halus.
2. Jika ragu menggunakan gelatin dapat diganti dengan  1/2 sdt agar-agar yang dimasak bersama air dan gula
3. Jika menggunakan gelatin, usahakan simpan pudding di lemari es paling tidak semalaman agar teksturnya lebih set. Kalo waktu di lemari es kurang maka pudding akan seperti bubur kental. and we don't want that right?
